I want to update entire fields for an item row in my domain but when I use “Update Item Row” I get single attribute-value to update, while table has 5 attributes.

You are getting a single Attribute-value pair to update because your item contains only this single attribute. No matter, how many attribute are displayed in table. Those attributes are common for each item but a single item has its own unique set of attributes.
